4 Tropical Acai Bowls Everyone Needs To Try

The latest & greatest fad to hit the streets - fruity, picture-perfect acai bowls that have your mouth watering at the mere sight of them. Well they're not just a pretty face, these ice-cold treats help banish toxins from the body, boost your energy and are packed with vitamins. Here's a few tropical-inspired recipes we recommend you try.

Banana & Coconut Acai Bowl

For an added health and color boost, try adding about 1 teaspoon of spirulina to the acai purée.

INGREDIENTS:

ACAI PURÉE

  • 1 cup fresh spinach
  • 1 cup fresh kale
  • 1/2 small banana
  • 1 100-g (3.5-oz) pack frozen unsweetened acai berry pulp (TRY: Sambazon Unsweetened Acai Smoothie Pack; before opening your acai pack, run pack under water for 5 seconds to thaw and break the frozen pulp into smaller pieces.)
  • 1/2 cup frozen mango chunks
  • 1/2 cup unsweetened almond milk (TIP: Instead of almond milk, you can substitute a mix of ¼ cup coconut milk combined with ¼ cup water.)

TOPPINGS

  • 1/2 small banana, sliced
  • 2 tbsp peeled and chopped pineapple
  • 1/4 cup granola, optional
  • 1 to 2 tbsp shredded unsweetened coconut
  • Drizzle of raw honey, optional

INSTRUCTIONS:

  1. Prepare acai purée: To a blender, add spinach, kale, banana, acai pulp, mango and a splash of milk. (TIP: Add to blender in that order as adding softer ingredients first makes it easier on your blender blades.) Blend on low until larger chunks are broken down, then gradually increase speed, adding a splash of milk at a time, and stopping to scrape down sides of blender if needed. When ingredients have mostly come together and all of milk has been added, blend on high for 15 to 20 seconds more.
  2. Add toppings: Pour acai purée into a bowl, then add toppings and drizzle with honey (if using).

INGREDIENTS

  • 2 Frozen Acai Berry Smoothie Packs
  • 1 1/2 cup homemade almond milk
  • 1 cup organic dark sweet cherries (I used frozen)
  • 1 handful organic kale (de-stemmed)
  • 2 teaspoons organic baobab powder

DIRECTIONS

Add all ingredients to a Vitamix and blend until creamy and smooth.

Optional: Garnish with extra cherries, cacao nibs and/or shredded coconut flakes.
 

Blueberry Cacao Acai Bowls

INGREDIENTS

  • 1 frozen acai packet (I get the Sambazon brand from Whole Foods)
  • ½ c. frozen blueberries
  • 1 small banana, previously sliced and frozen
  • 1 T. cacao powder
  • ¾ c. -1 c. unsweetened vanilla almond milk (I used about ¾ c. + 1 T.)
  • TOPPINGS:
  • sliced banana
  • freeze dried blueberries
  • fresh blueberries
  • cacao nibs
  • hemp seeds

INSTRUCTIONS

  1. Add acai packet, frozen blueberries, frozen banana, cacao powder, and almond milk to blender. Start with ¾ c of almond milk and only add more if the blender needs it. The less liquid you can add, the better, so the smoothie will be super thick and perfect for eating with a spoon! Blend for a few minutes or until smooth and creamy.
  2. Add to a bowl and top with banana, freeze dried blueberries, fresh blueberries, cacao nibs, and hemp seeds.

Blueberry Peach & Pecan Acai Bowl

INGREDIENTS

Smoothie:

  • 1 cup frozen peaches
  • 1 cup frozen blueberries
  • 1 frozen pack of acai
  • ¾ cup almond milk (more or less depending on desired consistency)
  • ½ cup chopped pecans

Toppings:

note: You can use fresh peaches if you want, or freeze your own fresh, however the frozen gives your bowl a thicker consistency. I measured the fruit by loosely placing in a measuring cup and stopping when first piece hit 1 cup mark. Any milk of choice will work.

INSTRUCTIONS:

Place all smoothie ingredients except for pecans into a blender and mix until well blended. Add a touch more milk if too thick and won’t blend, but you want it as thick as possible. Once blended, place in bowl with pecans and mix well. Top with recommended toppings or a topping choice of your own.
